Texas Ranger Nine-Bean Soup
Serves 6
1 lb. Mixed Beans -- Washed
2 qt. Water
1 lb. Ham Hocks Or Ham Bone
1 Large Onion
1 Clove Garlic -- Mashed
1 t. Chili Powder
1 28 oz. Can Tomatoes
Juice Of One Lemon
Salt And PepperWash beans thoroughly and place in large kettle. Cover with water and soak overnight. Drain. Add water, ham hocks or ham bone and onion. Simmer 2 hours. Remove meat from bones and return to beans. Add spices, tomatoes and lemon juice. Simmer another hour to blend flavors. Salt and Pepper to taste. Serve with cornbread
Ranch Salad
This may sound weird, but the combination of flavors and textures make this a delicious "must try"!!
3 qt. of mixed salad greens (lettuce, bell peppers, green onions, celery, etc. as desired)
1 carrot, grated
2 tomatoes, coarsely chopped
1 15-oz. can of Ranch Style beans, drained
1 c. cheddar cheese, grated
Catalina brand salad dressing
Doritos, crumbled
Toss all ingredients except dressing and chips, in a large salad bowl. Just before serving mix in last two ingredients. This is great as a light main dish in warm weather.
Texas Fruit Tray
A big, beautiful arrangement of fruit can become the edible centerpiece of a brunch or buffet table. Why not serve one that uses only fruits grown in Texas?
Serves 16
1 Pecos cantaloupe
1/4 Luling watermelon
4 Mission oranges
2 Ruby Red grapefruit from the Rio Grande Valley
1 pt. Poteet strawberries
1 pt. East Texas blueberries
1 c. wild dewberries or blackberries
mint leaves for garnishRemove rind from cantaloupe and watermelon. Seed cantaloupe and cut into 16 crescents. Cut watermelon into 3-inch wedges and remove visible seeds. Peel oranges and cut into 1/2-inch cartwheels. Peel and section grapefruit. Wash strawberries, blueberries and dewberries. Arrange attractively on a large tray and garnish with mint leaves. Serve with Poppy seed Dressing (see below).
Poppy Seed Dressing
2 T. onion, minced
1/3 c. sugar
1t. dry mustard
1 t. salt
1/3 c. vinegar
1c. vegetable oil
1 T. poppy seedCombine all ingredients except poppy seed in blender container. Blend at slowest speed for 30 seconds. Pour into a pint jar, add Poppy seed and refrigerate until ready to serve. This will keep 2 weeks if refrigerated.
Shelly's Pasta Salad
This is the very best pasta salad I ever tasted. Adjust the ingredients to your likin', usin' more, less or leavin' out the stuff you find disgustin'!! Personally I put in everything except the black olives.
tri-colored spiral pasta
cherry tomatoes, halved
celery, chopped
green onions, chopped
bell pepper, chopped
green & black olives, sliced
sweet pickles, chopped
boiled eggs, coarsely chopped
pimentos, chopped
miracle whip
sweet pickle juice
salt
pepperCook the pasta according to package directions, and cool. Mix all ingredients together, adjusting quantities according to amount of pasta cooked and your own personal taste.
Corn Tomato & Basil Salad
Serves 4
3 ears corn
4 ripe tomatoes
1/2 small red onion
1/4 c. extra virgin olive oil
2 T. red-wine vinegar (or more, to taste)
Coarse sea salt and freshly-ground pepper, to taste
1/2 c. basil leaves
Shuck the corn, and scrape off the kernels with a knife. Add the tomatoes and onions to the corn. Add the oil, vinegar, salt and pepper and mix well.
Just before serving, snip the basil leaves with fingers, and mix them into the salad.
