If you ever hope to understand "Texas" cooking, you must first realize that there is no single true "Texas" style at all!!!
Texas, like the smaller states, has been settled by so many diverse groups that it is now impossible to say what true "Texas" food even looks like. Over our long history, so many changes have been made and so many new things have been added to the mix, we might as well be a "whole Nuther Country" as far as our eats go.
But I suppose that to Yankees and other foreigners, we are "chili" eaters---first and foremost!!! It seems only fitting to begin here with the hope that all non-Texans at least start off on the right foot. After all, chili is our official state dish. The abbreviations used in these recipes are: c. = cup T. = Tablespoon t. = teaspoon lb. = pound oz. = ounce
